Non-friable low grit "oil" stones (or bonded diamonds) give no trouble at all. Most will find it easier to form a clean apex on a ~35 micron Norton India fine than a ~16 micron King 1000.

Sure with softer steels a less acute apex will result in a little longer edge life. But conversely a well heat treated knife will let you run a more acute angle and it'll last longer, again that's just the science.
