There should've been a flashback sequence exposing how Dr Gordon recruited these two mystery men, along with how they planned on capturing Hoffman. According to the commentary, it’s the two guys who survived the love triangle trap. I think those guys were borrowed from the movie's craft services department.

I found this explanation "At one point, the two pig masks that assist Gordon were supposed to be Brad and Ryan from the opening public trap.
