The most popular and unusual Navruz dish in Uzbekistan, however, is sumalak, a taffy-like treat prepared from wheat germ and flour. Although customarily cooked the night before Navruz, sumalak can be made any time in early spring.

Before, during, and after Navruz, it is customary to prepare sumalak, the main ceremonial dish of the holiday. Sumalak is a sweet paste made entirely from germinated wheat and is cooked in a large kazan.
