Aug 14, 2017 · Nei Appam is a South Indian sweet which is prepared mainly on Krishna Jayanthi or Karthigai Deepam. This sweet is prepared using rice and jaggery as the main ingredients. Nei appam is usually deep fried in ghee hence the name Nei Appam. The traditional method of making Nei Appam is a lengthy and time-consuming process.

If using a spatula, use another spoon to release the batter from the spatula. Cook the nei appam on both sides until crisp and brown. Add little more oil or ghee if you think after turning the appam on one side. Be generous with the ghee. You can use a mixture of ghee and oil if you want to cut down on the ghee.

It is best made with ghee, though oil too can be substituted for ghee. Grinding the batter to the right consistency is a critical step, as too dilute a batter will affect the moulding of the appam and the batter may just scatter away in the oil.
