The XBox One S cannot bitstream either DTS-HD Master Audio or Dolby TrueHD so you cannot access either DTS:X or Dolby Atmos audio if using the XBox as a player.

If your amplifier can take 5.1/7.1 PCM then you are getting the full soundtrack from a Blu-ray, the Blu-ray player is un-compressing the DD/DTS.
