
How do I DIY sushi grade salmon without a super freezer?
Jan 5, 2021 · That's just all my thoughts and what I gathered from watching Hiroyuki diary's of a master sushi chef on YouTube they have videos where they went to Walmart, whole food, Publix, and other stores and compared it to wholesale salmon for restaurants.

Jul 22, 2022 · Do not try to make sushi with anything except sushi-type rice. Stuff like Basmati, Jasmine, or that bag of Long Grain from the megamart won't work, because they don't have the right texture, stickiness, and body for the dish. (And dousing Basmati or Jasmine, or other fragrant rice with the Sushi vinegar just winds up tasting funny.) Have fun.

Experimenting in rice to sushi vinegar ratios for optimal texture and flavor. Depending on the rice, 10%-15% by weight of cooked rice to sushi vinegar is typical. Try to use short grained white rice whenever possible.
