Jan 12, 2010 · Since I make guanciale, I make bucatini all'Amatriciana fairly frequently, and try to keep good stuff on hand from the kinds of places Antonius mentions above, but when I run out, this stuff will do. Made this last week; took a photo because the guanciale is from a new artisanal producer, will post about shortly.

May 18, 2024 · Last Saturday night they were still at full capacity at 9.00. Eventually shared a four-top with another waiting Roma born couple we quickly became friends with. Bucatini all'Amatriciana had perfect noodles blended simply with low acidic tasting tomatoes and pancetta/guanciale (not sure which). No onion detected which is the way it should be.

Dec 8, 2024 · Burrata appetizer for the table, daily special (artichoke) pizza for me, carbonara for Audrey and bucatini for Jonathan. Spectacular pizza. Raves for the pasta. Friendly/good service. Looking forward to a return visit soon to explore more of the pizza menu. Surprised this place doesn’t get talked about more.

Jul 29, 2024 · Bucatini Carbonara Egg yolk, parmigiano, pecorino, guanciale, black pepper. Another winner. And again, perfectly al dente noodles. Tagliatelle Al Ragu Bolognese meat sauce. Damn! This was some righteous bolognese, not just some generic, meaty sauce. Subtly flavored and rich, it had a beautiful, long-lasting finish. La 'Busecca' Mantecata
