Tear the figs into halves and then quarters, then arrange evenly over the salad before giving a good sprinkle of sea salt. Drizzle with olive oil and the vinegar and gently toss to mix.
Add the courgette slices and gently mix through. Spoon onto a large serving platter, drizzle with some extra virgin olive oil, garnish with cracked black pepper and finish with some fresh mint leaves.
