Two years after two brothers opened PYO Chai in Stewart Manor, they’ve brought their concept to a second location, in Hicksville, one that’s a smaller-scale replica of the original.

This is a mistake, says Shaheer Khan, owner and CEO of PYO Chai. “You are not making bubble tea ‘better,’” says Khan, whose New York City-based brand focuses on South Asian-inspired boba teas.

Highlighted in the newsletter are spots like PYO Chai, in Hempstead, Long Island, which puts culturally relevant flavor spins on the drink, with cardamom and clove infusions, and kulfi as a topping.
