Longmont’s Auder Revolorio will travel to Missouri next week for the National Meat Cutting Challenge, where he’ll face off against 24 meat cutters from across the U.S.

In an average year, they cut about $1 million worth of meat and spend seven to eight hours a day cutting meat in their restaurant’s walk-in cooler, Texas Roadhouse said in a release.

To ensure the best, freshest quality meat, all cutting is done at a chilly 38 degrees. Each meat cutter is responsible for hand-cutting every steak served at their local Texas Roadhouse restaurants.
