Lamb ribs are not cheap. They're not easy to find. And, Chef Bob Adkins says they're temperamental to work with. But don't be daunted! This recipe would make a nice treat for a special occasion.
Remove the ribs, spoon off excess fat, brush or spoon the sauce over the ribs. Return to the oven, roast uncovered, until the ribs are caramelized and sticky, about 15 to 20 minutes.

Place the lamb, meaty side down, on a rack over a baking pan in the middle of the oven. Salt and pepper to taste. Bake 30 minutes, during which time much of the fat will drip off.
While the lamb roasts, fluff the rice and add it to a large bowl. Add the parsley and toss to combine. Season with remaining 1 teaspoon salt and remaining 1/2 teaspoon pepper to taste.
You cure the ribs overnight in a spice rub, roast them in a hot oven, baste them with their own fat, then during the last half-hour, glaze them with barbecue sauce.
